The French name lobster, Homard, means "hammer," and is derived from the fact that its claws resemble hammers. However, these claws are used solely for intimidation, and the small maxillae around its mouth are used to dig living holes and catch food. Lobsters are ferocious and it is not uncommon for them to injure each other, so once landed, lobsters immediately secure their claws with rubber bands or similar. Lobsters live solitary lives, digging holes in shallow sea reefs or gravel bottoms. They have an extremely long lifespan, with some estimated to be around 100 years old having been discovered.
There are many ways to prepare lobster, but for American-style cooking, try boiling or steaming it and serving it with lemon juice and melted butter. You can also halve it lengthwise and grill or roast it, or even make it into a bisque soup, which brings out the flavor of the lobster.
